Potatoes and tomato
1 large onion chopped into smallish ~1.5 cm cubes
5 potatoes chopped
4 large tomatoes skinned and chopped and cooked until melted
25g unsalted butter

Method
Fry the onion gently until soft in a little olive oil. Add the potatoes and sauté until cooked through. Add the cooked tomatoes and mix together. Add the butter and some milk or stock to liquidize to desired consistency.

Suitable for freezing.
